P.S....I know that I mention in this video about the target temp was wrong my bad, i know i said 165 but i was thinking about Chicken Breast. You can just buy the Skinless Chicken Thighs without the Bone in but you want get that Crispy bite that you would get with the Chicken with the Skin on it. The reason that i removed the Bones is because i wanted to used the Thighs to make Chicken Fillets, better yet you can used them to make Chicken and Waffles instead of Chicken Breasts.

Hey Chris, yes you do. It will not dry out while the Chicken is cooking.

Thank you for the video. I was curious if my wireless thermometer was accurate and found your video. It read at 212 in boiling water. I'm doing pulled pork so want to make sure. Thanks so much. I just liked and subscribed.
Hey James, glad i could help out with this info . If your thermometer is reading between the 121 and 214 degree range your gauage is working properly and no need to guess or get a new one.
@@PitmasterJW I gave it a test just like you showed in the video and it was accurate in it's reading. Glad I know my thermometer is accurate. Thanks for the info.

I highly recommend fresh. I tried frozen but they hold water and it didn't come out good.
